My aunt recently gave me a gigantic butternut squash and I had a big piece of it that I wanted to finish before it went bad. I used it for a salad and just sautéed with some salt and pepper and it was delicious! I have never tried cooking with it before this and it was so easy!
I wanted to try other recipes using the squash since I had a lot leftover after using about 1/3 of it for the salad so I searched up a butternut squash soup recipe. I found a lot! Most of the ones I found used vegetable or chicken stock, but I didn’t have that on hand. I finally found one that just used water and it was delicious! I found the recipe over at Michelle’s Brown Eyed Baker Blog. I never made soup like this before so it was fun to try. It didn’t take long and I was happy with the results 🙂
